Fresh from the field to the table: The Lechnerhof
At the Hotel Petrus, we attach great importance to fresh, regional and seasonal products. That's why in the summer we get our vegetables directly from our own vegetable garden, the Lechnerhof
Where horses once grazed, today a variety of vegetables and herbs grow
A vegetable garden has always existed at the Lechnerhof farm. Here, years ago, Gerti planted over 500 rose bushes. For the hotel decorations. And for over 30 years it was a popular riding stable, not only among locals. From here you have a wonderful view of the fields of Riscone and the "Kappler Stöckl". After our riding instructor had to give up his passion due to age, Hans dedicated himself to his great passion: gardening. Thus, a vegetable garden became an entire vegetable farm.
Our chef is happy about the fresh, organic products that he can process directly from the field. And when we say "directly", we mean it: In the morning, carrots, asparagus, salads and radishes are still in the ground, and in the evening our guests find them on the table.
Natural & unsprayed
Although we are not certified organic, we can say with a clear conscience that we work without chemical additives. That's why our radishes may not always be perfectly round, the arugula is sometimes a bit holey, and the apples have corners and edges. But they taste besonders good. The secret? Hans steams the soil before each sowing. All weeds disappear and the soil is thus perfectly prepared for regular and particularly healthy growth.
What grows here at the Lechnerhof?
At the Lechnerhof, we grow tomatoes, zucchini, eggplants, cucumbers, pumpkins, carrots, radishes, turnips, asparagus, onions, artichokes, broccoli, and cauliflower. We cultivate various salads such as Maikönig, arugula, spinach, iceberg lettuce, Trevisano lettuce, endive, radicchio, and Brussels sprouts. A variety of herbs such as rosemary, sage, parsley, mint, lemon balm, oregano, thyme, and chives also thrive here. Raspberries, strawberries, currants, elderberries, blackberries, pears, and apples round out the selection. And of course, we must not forget the many flowers that adorn the hotel and, in winter, enrich the decoration as dried flowers.
Teamwork for fresh products
Hans and our caretaker Peter work together to take care of the garden. Every morning, Peter receives the "order list" from the chef and then harvests the products needed for the evening menu. Anything that is not processed immediately is preserved, for example, made into jams, syrups, and chutneys.
